Pressure cooker recipes pastaIt may sound strange but this Pressure Cooker Recipes%image_alt% Pasta, in particular Rigatoni with ground beef and balsamic vinegar is fantastic and it is all due to the Pressure cooker I’m sure.  It has the wonderful Italian flavor%image_alt% you are expecting but it also has a little bite, that is the balsamic vinegar. Wow! It is really a success in my home. If you are new or experienced with pressure cooker pasta recipes this is a great recipe and it is simple and really fast. And a really neat thing about pasta and pressure cookers is that the pasta is put in uncooked and it cooks in the sauce to perfection. And with the added bonus of intense flavor with all that wonderful goodness infused right into the rigatoni. Really delicious.

One thing you might not know about Pressure cooking is, it is not only about speed. Yes stuff cooks fast in a pressure cooker and it does save you time, but the big deal about pressure cooking is that it really infuses the flavor into whatever you are cooking. Things taste robust and filled with flavor. In this recipe I used Balsamic vinegar yet it doesn’t taste like vinegar or even smell like vinegar. But it is delicious and not your everyday flavor. Truly remarkable.

This Pressure Cooker Recipes Pasta and ground beef is a great meal to prepare when you are short of time, and it serves six to eight without any problem, or it is great for left overs. I got the idea from Blue Jean Chef Recipes. I watch her all the time on QVC and on her facebook page and I love her easy pressure cooker recipes. But she does like to cook with wine, and I just never developed the taste for it. But feel free to substitute wine for the balsamic vinegar in my recipe. 


Some beautiful garlic toast would be a perfect accompaniment along with a nice green salad for pressure cooker recipe pasta.  The perfect meal when serving guests or a family dinner.  And this will freeze well for you if you have left overs and you don’t plan to eat the leftovers any time soon. Ingredients
  1. 2 pounds ground beef
  2. 1 onion, diced
  3. 2 tsp chopped garlic
  4. 1/2 tsp crushed red pepper flakes
  5. 2 thinly sliced carrots
  6. 1/2 cup balsamic vinegar
  7. 2 cups chicken broth
  8. 2 cans of diced tomatoes with basil and oregano
  9. 1 box of rigatoni, 16 oz size
  10. salt and pepper
  11. grated Parmesan cheese
Instructions
  1. If you have a pressure cooker with a browning feature, cook your ground beef and then slotted spoon the meat out of the pressure cooker and set aside. If not, fry up your beef on the stove top. Put the diced onions and garlic and red pepper flakes into the pressure cooker and cook for 2-3 minutes until onions are soft. Then add the sliced carrots, vinegar, chicken broth and diced tomatoes. Next add back the cooked ground beef and stir all together. Add the rigatoni and stir into the sauce and push the pasta under the sauce. Put the lid on the cooker and set it for 9 min. When finished use the quick release method and carefully remove the lid.
Notes
  1. I used salt and pepper throughout the process, when I cooked the meat, when I was sauteing the onions and after I removed the pressure cooker lid, I seasoned the finished meal again. I believe you need to season all the layers of your cooking. Top your dish with grated Parmesan cheese.
