A healthy and robust delicious vegetable side dish
Ingredients
  • 3 cups dried black eyed peas
  • 12 cups chicken broth
  • 3 smoked ham hocks
  • 11/4 cups chopped onions
  • 1 cup chopped celery (optional)
  • 1 tsp salt
  • ½ tsp pepper
  • 3 dashes of hot sauce
  • 1 bay leaf
Instructions
  1. Wash and discard any impurities in the beans. Place in a large pot or Dutch Oven covered with water. Bring the beans to a full boil and boil for 2 minutes. Take them off the heat and keep them covered while they stand for one hour off the heat.
  2. And the rest of the ingredients and simmer for about one and a half hours until the ham hocks are tender. Remove the bay leaf and discard. Taste it at this point and add salt and pepper as needed, to taste.
